Celebrating National Hispanic Heritage Month

President Barack Obama proclaimed September 15th through October 15th of 2015, as National Hispanic Heritage Month. In celebration of National Hispanic Heritage Month, we honor the cultures and contributions of the many Hispanic families and Americans with Hispanic lineage.  
Hispanics have highlighted the beauty of diversity in our country. They bring the richness of their culture, customs and traditions to the United States, and what a joy it is to be able to indulge their many delicious foods, music, dances, and other traditions. This month certainly gave me the opportunity to reflect upon our family and how we celebrate our culture with love and pride of our heritage. As Puerto Ricans, we have the privilege of being simultaneous citizens of the United States and the Caribbean island. Our family was blessed with celebrating and embracing both our American and Hispanic cultures.

Our family always looks for opportunities to welcome others with friendship and acceptance. Besides, who could resist the smell of delicious foods escaping our kitchens, or the rhythmic beat of indigenous Caribbean sounds!  

Today, I was inspired by the many posts and blogs I read about the celebratory activities taking place in honor of National Hispanic Heritage Month.  We started by enjoying Chicharrones (Pork Rinds) and Papa Relleno (Potato balls filled with meat).

In order to make my kid's favorite entrée, I needed to start with some fresh, home-made sofrito (this is a mixture of herbs and vegetables blended into a fabulous sauce). This is the secret ingredient many Hispanics use in soups, stews, and rice dishes. This mixture packs a punch of flavor that will enhance many of your dishes. It's also a great way to sneak in the flavor of onions, peppers and other herbs in foods, especially when you have children who are picky eaters. My boys love Arros con Salchichas (Rice with Vienna Sausage). It’s not Puerto Rico’s national dish, but it is one of my kid's favorites.  I add some sautéed beef, seasoned with peppers and onions, some platano maduros (sweet plantains), and I have a meal everyone enjoys. I love having everyone together at the table, ready to eat! By the way, Puerto Rico's national dish is Arroz con Gandules (Rice with Pigeon Peas). This is usually served on holidays and at family gatherings, along with Pernir (roast pork), and home-made potato salad .

For dessert, I can’t think of anything better for my boys to enjoy than a glass of milk with their #TastyKakes minis chocolate cupcakes, laced with peanut butter flavored icing, and filled with a creamy peanut-butter flavored filling.  The small portions makes it the perfect serving size for younger ones and for portion control! These bite-sized cakes are deliciously moist, fluffy, and will satisfy any chocolate and peanut butter cravings.

We are as blended as families come and we love it! My husband is a proud native Jamaican, I am a proud American/ Puerto-Rican, and my 13 year-old son, Richie, has autism. Acceptance and diversity resonates with our family's theme: "One love, One heart." The great Bob Marley couldn't have put it any better.

Nuestra cultura es tan diversa que nunca deja de sorprenderme.En casa tambien nos encanta el arroz con salchicha. Me saca de apuros cuando no sé qué cocinar. :))

OMG me encantan las comidas de Puerto Rico!! Por favor pon esas recetas en el blog. Yo tengo mi cuñada puertorriqueña y siempre le pido arróz con gandules.
