Fish Grill and Salmon Patties Family Dinner.

Grilled Tilapia and Salmon Patties
Growing up, my brother and I weren’t the type of kids who knew how to crack crab legs, peel and eat shrimp, nor could we tell you what a fish boil was. We didn’t really eat much seafood. Of course, years later after I outgrew my childhood picky palette, I learned to appreciate the joys of eating good seafood. 
I now love seafood. However, I admit truthfully to my good friends (you’re all good people for reading my blog), I still won’t crack a cab leg or peel and eat a shrimp. You see, I’m a bit of a hypocrite when it comes to meeting and then eating my food. I won’t eat anything that resembles its former self. I know, it’s silly – but I can’t help it. Now, I want to prepare more seafood dishes for my children and family, because I want them to enjoy seafood as my husband and I do.

I recently received a fish grill basket from Cave Tools in exchange of a product review.  Of course, we are not the biggest fish eaters on the block, but I chose this product to review because as I mentioned, I want the kids to start eating more seafood.  So, I decided to make a seafood dinner as one of our Sunday family meals. As some of you frequent readers know, my daughter, son-n-law and granddaughter come every Sunday to eat (and do laundry) a family dinner.  It’s a family tradition for our children (it’s also way Kirk and I hope will coerce them into living close to us when they leave the nest!). 
For our fish-grill family dinner, I chose to make grilled Tilapia filets and Salmon Patties. For the grilled Tilapia, I simply seasoned them with some olive oil, garlic salt and pepper.

Placing them in the grill basket was easy. I could fit about 3 filets at a time.

 One of the things I noticed right off the bat was that using the grill basket eliminates the fish from sticking to the grill. Fish filets cook pretty quickly on the grill, so I turned these filets over after about 4 – 5 minutes (or more depending on the filet’s thickness).  
 The filet slid off the grill basket onto my serving plates and they were cooked perfectly. The filet were crispy on the outside, but tender and flaky on the inside. I added a Mango Salsa as a topping, but even without the salsa, the filet were absolutely delicious! For the Mango Salsa, I sauteed the following in a pan:

1 tablespoon of olive oil
½  Red Onion Chopped
½ cup Red Pepper Chopped
½ cup Green Pepper Chopped
1 small Jalapeno Pepper Chopped
2 Garlic Cloves Minced
3 tablespoons lemon juice
¼ cup Cilantro Chopped
1 Cup of Diced Mango
I sauteed all the first eight ingredients in the pan for about five minutes on medium heat or until they were soft. I added the diced mango last to the mixture - and only for about a minute.

For the salmon patties, I used a recipe I found from Natasha’s Kitchen and it was absolutely awesome! This recipe made the best salmon patties I’ve ever had – they were moist, tasty and there wasn’t a fishy taste to them. This recipe made about 18 patties, which was a perfect addition to our fish grill entree for my family. My son Richie (who has autism) almost finished the entire batch – we had to hide them!

I looove seafood (although I still don't really know how to crack crabs)! This grill basket looks perfect to keep those pieces from sliding between the gates! Love your salmon patties -- one of my fave things!

I need that fish grill basket in my life! I love grilled seafood, but always have trouble with it sticking no matter how well I oil it first. This recipe looks incredibly delicious, and I'm really looking forward to trying it!
